- Start by letting your cream cheese come to room temperature so it’ll mix easily. In a small bowl, mash together the cream cheese, fresh lemon juice, chopped chives (holding back a little for garnish), salt, black pepper, and minced garlic until the mixture is smooth and spreadable.
- Slice the English cucumber into thick, even rounds. I usually go for thicker slices so they’re sturdy enough to hold the toppings—plus you get even more that satisfying crunch.
- Spread a small dollop of the cream cheese mixture onto each cucumber round, swirling with a little flourish if you’re feeling decorative.
- Layer a piece or two of smoked salmon on top of the cream cheese. Pile it gently so you get those beautiful curls and folds.
- Finish each bite with a pinch of the reserved chives for color and a final hit of freshness.
- Arrange the finished bites on a platter and serve immediately, or keep them in the fridge, covered, until your guests arrive. The cucumber stays crisp and the flavors only get better if you give them 10–15 minutes to mingle.
