Instructions
- Cook 2 cups of uncooked rice according to package instructions, then set aside.
- Chop 2 small heads of broccoli into small florets and set aside.
- Slice 3 large chicken breasts into strips and season with 1 tsp salt, 1/2 tsp pepper, 1 tsp smoked paprika, 1 tsp chili powder, 1 tsp onion powder, and 1 tsp oregano.
- Heat 2 tbsp of olive oil in a non-stick skillet over medium heat, add the chicken strips, and cook until golden brown and cooked through, about 6-8 minutes.
- While the chicken is cooking, steam or sauté the broccoli in the same pan or in a separate pan until tender, about 4-5 minutes.
- In a mixing bowl, whisk together 1/2 cup soy sauce, 1/2 cup honey, 1/4 cup rice vinegar, 3 cloves of minced garlic, 2 tbsp sriracha, 2 tsp sesame oil, and 1 tsp ground ginger. Pour the mixture into the skillet with the cooked chicken and simmer until thickened, about 4-5 minutes.
- In a separate bowl, stir together 1/2 cup mayo, 1 tbsp sriracha, and 2-3 tbsp water until you achieve a pourable consistency to make the spicy mayo.
- To assemble the Healthy Sticky Chicken Bowls, place a scoop of rice in each bowl, top with chicken and broccoli, drizzle with spicy mayo, and sprinkle with sesame seeds.
