  • 1 tablespoon olive oil or avocado oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 6 cups chopped romaine lettuce or mixed greens
  • 2 cups cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup dill pickles, sliced or diced
  • 4 slices cooked bacon, crumbled
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon dill pickle relish
  • 1 teaspoon white vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Pinch of salt
  • Sesame seeds

  1. Set a large skillet over medium-high heat and add a splash of your chosen oil. Once it’s shimmering, toss in the onions and cook until translucent and soft, their sweetness just beginning to surface.
  2. Add the garlic and let it bloom in the pan for a minute—right when you catch that nutty aroma, it’s time for the ground beef. Break the meat up and brown it, letting it develop those rich, caramelized edges.
  3. Season the beef with Worcestershire sauce, smoked paprika, onion powder, garlic powder, and plenty of salt and black pepper. Let everything mingle in the skillet until you have a deeply seasoned, slightly crispy crumble. Spoon off any extra fat if you need to.
  4. While the beef mixture cools slightly, whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish, white vinegar, a dusting of garlic powder and paprika, and a pinch of salt for your “burger sauce.”
  5. Line your bowls with a bed of crisp greens, then start layering: beef, cherry tomatoes, cheddar, pickles, sliced red onion, avocado, and bacon. Drizzle with the special sauce and sprinkle sesame seeds over the top.
  6. Go wild with extra toppings—jalapeños for heat, sautéed mushrooms for earthiness, caramelized onions for sweetness, or crispy onions if you crave crunch. Each bowl can be completely tailored, right down to the last delicious detail.
