  • 100 g corn (fresh or canned)
  • Mixed greens (e.g., arugula or lamb's lettuce)
  • Tortilla chips
  • Salsa or yogurt dressing

Method
 

Instructions
  1. Slice the chicken into even-sized pieces.
  2. Heat a dash of oil in a frying pan over medium heat.
  3. Sear the chicken for about 7-10 minutes until golden and cooked through.
  4. Season the chicken with salt, pepper, and your favorite spice blend.
  5. Dice the avocado.
  6. Halve the cherry tomatoes.
  7. Slice the red onion into fine rings.
  8. Lay a generous handful of mixed greens in a bowl.
  9. Layer the cooked chicken over the greens.
  10. Add the diced avocado, halved cherry tomatoes, corn, and onion on top.
  11. Generously sprinkle tortilla chips over everything.
  12. Drizzle with salsa or yogurt dressing.
