- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse with cold water.
- While the pasta cooks, heat a grill pan over medium heat. Season chicken with salt and pepper, cook for 6-7 minutes per side until cooked through. Slice or cube.
- Chop romaine lettuce and rinse under cold water. Pat dry and chop into medium-sized pieces.
- In a bowl, whisk together ingredients for Caesar dressing until smooth and creamy.
- In a large bowl, combine cooked pasta, sliced chicken, chopped romaine, and croutons. Toss well and drizzle with dressing.
- Season with salt and pepper, mix well, and chill in the refrigerator for at least 30 minutes.
- Before serving, stir to redistribute dressing and sprinkle additional Parmesan cheese on top.
