  • 4 cups Beef stock (Rich base)
  • 1 cup Guinness Stout (Adds character)
  • 2 tablespoons Cornstarch (For texture)

Instructions
  1. Sear the Beef: In a medium frying pan, sear both sides of the stewing beef until lightly browned, about 3-5 minutes per side. Once done, place the beef in the bottom of your crock pot.
  2. Layer the Veggies: Sprinkle salt, black pepper, and thyme over the seared beef. Next, layer the small red potatoes, large carrots, celery ribs, large parsnip, and medium red onion on top.
  3. Add the Broth: Carefully pour the beef stock and Guinness Stout over the meat and vegetables.
  4. Cook on High: Cover the crock pot and let the stew cook on high for about 3-4 hours until the beef is tender.
  5. Thicken the Stew: Add cornstarch to the mixture and stir well. Let the stew rest for about 20-30 minutes to thicken.
