Ingredients

Ingredients
  • 1 pound boneless, skinless chicken thighs (or chicken breasts) Juicy, flavorful, and perfect for bringing the filling to life.
  • cooking oil of choice Helps create that golden sear on both the chicken and tortillas.
  • kosher salt, pepper, BBQ seasoning blend Layers on the flavor; the seasoning is key to making the chicken pop.
  • 3 tablespoons BBQ sauce Gives smoky sweetness and classic BBQ depth—plus more for drizzling inside for an extra kick.
  • 2 tablespoons hot honey Brings just the right amount of heat and that sticky, tantalizing glaze.
  • 4 large burrito size flour tortillas Ideal for holding all that delicious melty filling together.
  • 3 cups shredded cheese of choice The glue of every great quesadilla—go bold with smoked gouda, classic cheddar, or even a pepper jack for extra zing.
  • 1/2 cup chopped cilantro Adds a pop of freshness and color if you love those herby notes.
  • Optional toppings: sour cream, jalapenos For cooling things down or dialing up the spice at the end.

Equipment

  • Griddle

Method

Instructions
  1. Preheat griddle to medium. Add cooking oil, chicken, kosher salt, pepper, and BBQ seasoning. Cook 6 minutes, mixing a few times with spatulas.
  2. Add BBQ sauce and hot honey. Cook 2 more minutes, mixing together. Remove and scrape griddle clean and lower heat to medium-low.
  3. Add more cooking oil and lay the tortillas flat on griddle. Sprinkle half of the cheese on one side of each tortilla. Add chicken, drizzle a little more BBQ sauce and hot honey, add cilantro if using, and remaining cheese.
  4. Fold the empty side of each tortilla over the filled side and cook the quesadillas a minute or two per side. Remove once the cheese is melted and the tortillas are crisped how you prefer.
  5. Serve with sour cream and jalapenos if desired.
