  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite sized pieces
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1–2 teaspoons sriracha
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar or lime juice
  • 1 clove garlic, minced
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup shredded cabbage or lettuce
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Fresh cilantro, for garnish

Instructions
  1. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar or lime juice, and minced garlic until the sauce is smooth and creamy.
  2. In another bowl, toss your chicken pieces with the all purpose flour, salt, and black pepper until evenly coated.
  3. Heat the olive oil in a large skillet over medium high heat. Cook the chicken for 5 to 7 minutes until golden brown and fully cooked through.
  4. Divide cooked rice among four serving bowls and layer with shredded carrots, sliced cucumber, and shredded cabbage.
  5. Top with crispy chicken, drizzle generously with Bang Bang sauce, and garnish with green onions, sesame seeds, and fresh cilantro.
